This is a “oldie” from way back, but continues to be a family favorite. It is very simple, yet so very tasty! There are many versions of this casserole. This recipe came from a neighbor years ago and is the one we have used throughout the years.
Soapa (also known as King Ranch Casserole)
- 1 chicken boiled and skinned (or use 4 chicken breasts)
- 1 can cream of mushroom soup
- 1 1/2 cans cream of chicken soup
- 1 can Rotel tomatoes and chilies
- 2 cups of grated cheddar or American cheese
- 1 large package corn tortillas
- 1 onion finely chopped
- salt and pepper
- Optional: sprinkle of chili powder or garlic powder
- 1 cup of chicken broth saved from cooking chicken
Mix soups, onion and Rotel in skillet where onions have been saute’- Making sauce
- Spray casserole dish with non-stick spray (9×13 inch dish)
- Place 1/2 pack of torn tortillas on bottom of casserole
- Add layer of sliced chicken
- Add layer of sauce
- Add layer of grated cheese
- Repeat layers and top with cheese
- Pour 3/4 to 1 cup of chicken broth on top and put in refrigerator for 2-4 hours to let tortilas soak up the broth
- You can even make the night before and cover and store in refrigerator
- Bake at 350 degrees for 30-45 minutes until brown and bubbly
