Soapa


This is a “oldie” from way back, but continues to be a family favorite. It is very simple, yet so very tasty! There are many versions of this casserole. This recipe came from a neighbor years ago and is the one we have used throughout the years.

Soapa (also known as King Ranch Casserole)

  • 1 chicken boiled and skinned (or use 4 chicken breasts)
  • 1 can cream of mushroom soup
  • 1 1/2 cans cream of chicken soup
  • 1 can Rotel tomatoes and chilies
  • 2 cups of grated cheddar or American cheese
  • 1 large package corn tortillas
  • 1 onion finely chopped
  • salt and pepper
  • Optional: sprinkle of chili powder or garlic powder
  • 1 cup of chicken broth saved from cooking chicken

Mix soups, onion and Rotel in skillet where onions have been saute’- Making sauce

  • Spray casserole dish with non-stick spray (9×13 inch dish)
  • Place 1/2 pack of torn tortillas on bottom of casserole
  • Add layer of sliced chicken
  • Add layer of sauce
  • Add layer of grated cheese
  • Repeat layers and top with cheese
  • Pour 3/4 to 1 cup of chicken broth on top and put in refrigerator for 2-4 hours to let tortilas soak up the broth
  • You can even make the night before and cover and store in refrigerator
  • Bake at 350 degrees for 30-45 minutes until brown and bubbly
