Easy Enchilada

Let’s face it, most of us need a break in the kitchen. There are many nights I just don’t have the time or desire to cook!

My daughter -in- law passed on this easy meal tip and I will say that “Cowboy” loved it.

For two people you will need:

  • 2 Amy’s Enchilada Dinners ( I used the black bean and vegetable)
  • 1 can Herdez Salsa
  • 1 can black beans
  • 1 cup shredded White Mexican Cheese
  • 2 avocados
  • diced tomatos
  • diced onion if desired
  • 1/2 cup diced lettuce

Pop the two Amy’s dinners into a microwavable dish. Drain the can of black bean and arrange around the 4 enchiladas. Pour 1/2 can of the Herdez Salsa on top or entire can if you like lots of spice! Pop in microwave for 8 minutes on high and another 2 minutes on reduced power. Remove and add cheese and cook on high for 20-30 seconds. Top with lettuce, tomato, onion and avocado and serve! We also enjoyed a fresh green salad.

This was easy and amazingly delicious. The reason this tastes so good is because the Amy’s enchiladas are amazing and not your average frozen meal. They are organic and healthy and very tasty. I bought them on sale which made it a very affordable meal.


If you cannot find Herdez Salsa then I am sure you can find a local canned salsa. Be sure it comes from a can and not a jar as they are very different.

  1. It sounds WUNDERFUUL! But we don’t get Amy’s or Herdez! But I’m going to try it with stuff we get around here! My family will go wild, I’m sure! Just wish we could get the real Tex- Mex like you do, though.
